I have a digital boost/pyro multi-gauge that has an oil temperature option. So it follows that I was thinking of adding a sender to my engine to take advantage of it.

Any recommendations on where to put the sender? I would think MB put a port somewhere for this purpose.

Either the sump or the oil filter base sidewall. The sump will have an "actual temperature" but the filter housing will be after the oil has gone though the cooler.

By sump, you mean somewhere on the oil pan?
I'd much prefer that to a point right after the cooler

Yes. You could braze a plug into the size of the pan or use a sensor that replaces the drain plug.
