If one were to convert the OM606 in a w210 to a mechanical IP, would all the luxury/safety features be retained? Reason being: I'm tired of all these crappy electronic systems failing in my 16yo car.

Afraid not. The electric pump ECU is linked via the canbus to other vacuum engine management components and the gearbox.

So other than the injection pump and emissions, what else does the ecu control? If I were to do tranny swap or stand alone auto controller with mechanical IP, there shouldn't be anything inhibiting the car from driving. Right?

Would the systems that control AC, or cooling be maintained? Would AUX fans still work?

A/C control needs a RPM signal from the instrument cluster via the K2 line, instrument cluster gets it's RPM from the IFI controller (engine ecu) The transmission would need to be downgraded from the 722.6 as the ETC controller needs to know throttle angle, engine load, engine speed, engine temp. Even if you went the stand alone route you would not have ASR/ESP, no climate control, would be a lot of work to get your instrument cluster up and running.
I can't imagine there are that many electronic "issues" with your 210 that would warrant an attempt to swap over to a all mechanical system which would bring it's own level of problems and excitement.
